The Production

The company, a dairy cooperative founded in 1930, unites farmers from across the whole Calabria and has at its heart the dairy.

Our dairy covers a surface of 1.700 m2 and is divided into three sectors:

  • Fresh cheeses
  • Steamed stretched cheeses
  • Aged cow and sheep cheeses.

All types of cheese are produced using artisanal processes without any preservatives or additives. The milk used originates from the stables that are part of the cooperative and that use only natural fodder.

The ageing is done in modern structures with controlled humidity and temperature.

During the ageing, the cheese evolves and experiences the changes that allow it to develop its unique characteristics.

During this period, the cheese is turned and cleaned periodically by hand and following tradition.
